Estate grown and hand harvested, de-stemmed into bins and cold soaked for five days. Primary fermentation in bins, followed by gentle extraction. Secondary fermentation in 10% new and 90% seasoned French and American oak for 12 months. Rich, ruby red colour, with great tannins. Classic aromas of cherries, berry fruit, with hints of cigar box. Dark chocolate and cherry pith on the palate, with hints of white pepper. Pair this Cabernet with rosemary lamb, slow roasted beef, or lava cake. Enjoy today, or cellar for later.
