This 100% Appassimento style Cab Franc was kiln dried for 24 days in refurbished tobacco kilns. Aged 12 months in newer French and American oak barrels. Deep ruby colour, with an interesting bouquet of plum, mocha, and jalapeño peppers. Medium body followed by softer tannins, and hints of cherry, campfire smoke, and bay leaves. Try this wine with a hearty chilli, or pasta with red sauce and meatballs. Pairs well with mushrooms and/or soy sauce dishes.
